A secluded garden seating six

Today, and for the next few weeks, I’m setting up shop in the 9th arrondissement of the capital, at the foot of Montmartre, with ‘ONA au numéro 40’ – a unique, intimate and exclusive dining experience for just six guests. In a Parisian flat, I’ll welcome you as if you were at home, with a menu centred on ‘Le Vivant’ in all its forms.

This cuisine, which conveys a message, is not created at the expense of flavour. ONA au numéro 40 is a new experimental space where an exclusive world of distinct flavours comes to life. We savour a story that springs from the depths of time whilst reflecting on the contemporary issues that concern us all.

A dedicated table and innovative experiments

Throughout my travels, I have collected traditional recipes that can meet the energy, environmental and economic requirements of a rapidly evolving culinary world. Using exclusively plant-based ingredients is one of the solutions to the climate emergency, but this responsible approach demands three times as much work, creativity and preparation. Avoiding dairy products and eggs, for example, means I cannot use the ingredients traditionally found in French cuisine. We gather bark, edible flowers, spices… In the kitchen, fermentation, drying and other energy-efficient techniques are taken to their absolute limit.

This labour-intensive process of development, research and exploration, spanning several months, was carried out in collaboration with Shira Benarroch, a plant-based cuisine consultant and recognised specialist in fermentation. It was a natural collaboration between two women determined to demonstrate the merits of a more virtuous diet.

My thanks

This term, which means ‘living’ in Sumerian, ties in with my background as an archaeologist. It embodies the sum of my travels and experiences, during which I drew inspiration from new techniques to develop a more radical and energy-efficient approach to cooking.
